Once again, Rich outdid himself. He’s been on a crazy grilling kick for the past week or two, and we’ve had an amazing array of steaks, chicken, corn, squash, peppers… YUM. He’s also been making different potato-y things to serve on the side, which makes me incredibly happy, as I love almost anything potato. He’s done twice-baked potatoes and mashed potatoes, plus this beauty: a warm potato salad with fresh dill and capers.
It’s loosely based on one of Jamie Oliver’s recipes (f
rom TV, though, and I can’t find it online I found it! ) as a starting point. The cooked potatoes are topped with a mixture of sour cream, capers, dill, olive oil, lemon zest, and a little fresh lemon juice. Tasted like summer!
