Rich’s Chili Con Carne

I know I missed posting a meal last week- meals have been a little different recently, since I eat them lying down in the family room- but I have a new meal for you today!

Rich made this chili con carne a couple nights ago, using his incredible sixth sense for what ingredients will taste good when you put them together. The chili involved tomatoes, meat (duh), kidney beans, garbanzo beans (chickpeas), corn, red bell pepper, onions, leeks, dried ancho chiles (which have very little heat), and assorted spices.

BUT the secret ingredient, which gives it an amazing warmth and spiciness without the heat? Cinnamon. Oh how I LOVE cinnamon in chili! Plus a little shredded cheddar and a dollop of sour cream on top, and you are good to go.

    It was so, so, so good– the kind of chili that makes the whole house smell festive. Cinnamon was the perfect ingredient. I never would have thought of that. Rich is quite a chef! 🙂
