Rich used this recipe for Quick and Easy Pizza Dough, and it was not only quick and easy, but delicious as well: soft, light, a little chewy, a little crispy on the outside. YUM.
My contribution to the pizza was coming up with the combination of toppings, for which I must pat myself on the back: sweet peppers, chicken, goat cheese, and red onions. Rich decided that rather than traditional marinara, the pizza should have a pesto base; he made the pesto himself from basil, walnuts (instead of traditional pine nuts), olive oil, garlic, parmesan, and a little bit of goat cheese.

P.s. If you don’t know me and Rich well, you may not know that in this house, Rich is the chef. Long before my bed rest, Rich was inventing unbelievably tasty dishes all the time- FOR FUN. Our first real date, he cooked an entire Indian meal for me. He is so wonderful. I am so spoiled.
